NATURAL BROTH WITH SOFRITO FOR A VEGETABLES PAELLA

The first Paella broth with only organic vegetables, cooked with nothing but fresh, natural and organic ingredients. We make a sofrito with onion, zucchini, carrot, fried tomato and black garlic in extra virgin olive oil, then season with rosemary. Then we make broth from chopped fresh vegetables (zucchini, carrot, leek, celery and eggplant), cooking them for more than 3 hours and seasoning them with salt and bay leaf. When the broth is ready, we add it little by little to the vegetable sofrito.
