Gather all the ingredients to make this delicious recipe of Castilian soup.
In a medium pot, heat the olive oil and, when it starts to change color, add the garlic and diced ham and stir.
Crumble the bread and add to the pot with the garlic and ham. Stir until the bread starts to change color.
Remove from heat and add the paprika. Put back on heat and cook for 1 minute while stirring constantly. Add broth and cook for 15 minutes.
Meanwhile, separate the yolks from the whites (place the yolks in individual bowls). After the broth has cooked for 15 minutes, add the whites and stir so that they cook and leave clear "threads."
Pour the soup in 4 bowls. Place a yolk in the center of each and grind some black pepper on top. Enjoy!
