Gather all the ingredients.
Cook the chicken until done in a pan with olive oil, season to taste. Remove from heat and cut into ½ cm strips. Set aside.
Boil the noodles in water for 3 to 4 minutes, drain and set aside. Boil the eggs for 5 minutes, peel, cut in half and set aside. The yolk should be a bit runny.
Add broth and ginger to pot and bring to boil. Add the mirin and the soy sauce, boil 2 minutes and let flavors combine for 2 more minutes.
Serving instructions: place noodles in a bowl, cover with broth, add chicken, ½ egg, bean sprouts, and chives.
